The bouquet opens with ripe yellow fruit, honeydew melon, and floral honey, accented by a hint of pink peppercorn. On the palate, it is rich, layered, and balanced, revealing notes of grapefruit, apple, and subtle waxy texture. Vibrant acidity provides lift and focus, while a touch of grapefruit pith adds a refined, bittersweet complexity to the long finish.
Fermented and aged for 11 months in concrete egg vessels and neutral barrels, the wine combines texture and minerality with expressive fruit and freshness. A true reflection of Waterford’s precision and artistry.
A complex and elegant Chenin Blanc – perfect with seafood curry, goat’s cheese salad, or creamy pasta dishes.
