The story of “The Crab & The Heron” follows a clever crab named Krabie and a cunning heron. When the heron attempts to deceive the crab with false promises, Krabie recognises the danger in time and escapes through wisdom and caution. The fable symbolises awareness, intelligence and the ability to look beyond appearances – qualities beautifully reflected in this wine.
In the glass, the wine reveals vibrant aromas of tropical fruit, passion fruit, guava and mineral citrus notes. The Sémillon component adds delicate white floral notes, pear drops and hints of lemongrass.
On the palate, the wine is fresh, focused and layered. The mineral freshness of Hemel-en-Aarde Ridge meets the textured richness of clay and shale soils. Six months on the fine lees provide additional structure, elegance and a long harmonious finish.
The grapes were hand-harvested in the cool early morning hours and vinified separately to preserve freshness and complexity. Different picking stages throughout harvest created a Sauvignon Blanc with exceptional balance and aromatic depth.
