Dornier Merlot 2021 - Elegant Classic from Stellenbosch Mountain
The Dornier Merlot 2021 originates from the south-westerly slopes of Stellenbosch Mountain, grown in red and yellow decomposed granite soils rich in clay. Low yields and high grape quality are achieved through careful vineyard practices.
On the nose, this wine offers aromas of cherry, dark berries, and hints of fynbos. Bright ruby-red in color, it shows freshness and balance on the palate, with flavors of ripe black cherries, plums, and blackcurrant. A long, full finish with subtle class and elegance rounds out the experience.
Hand-picked grapes were fermented in stainless-steel tanks and the wine spent 18 months ageing in French oak before final blending. A refined Merlot with depth, structure, and polished balance.
Food pairing: Ideal with game meats like kudu, roast or stewed beef, and aged cheeses.
