Our Wine of the Month July
The Fairview Darling Sauvignon Blanc 2025 comes from dryland vineyards in Darling, only 8 km from the West Coast. The vines grow on deep Oakleaf soils and thrive in the cool coastal climate, which enhances the freshness and aromatic intensity of the grapes.
In the glass, this Sauvignon Blanc displays a pale straw colour with a green hue. The bouquet is expressive with tropical fruit, fig, lemon, and lime. On the palate, it is fresh, fruity, and lightly herbal, supported by crisp acidity. A touch of mid-palate sweetness adds balance, leading into a salivating, dry finish. A wine that beautifully captures the cool-climate character of Darling.
