Winemaker at Stark-Condé: José Conde
José Conde originally came from the USA and spent many years working as a graphic designer and art director in New York and Tokyo. After earning his degree in Fine Arts from Parsons School of Design, he initially pursued a career in design – until a desire for a more hands-on craft led him to South Africa.
Since the late 1990s, José has lived with his family in Stellenbosch. Without formal winemaking training, but with great curiosity, passion, and access to outstanding grapes from his in-laws’ family estate, he developed his very own style.
With a clear focus on quality, craftsmanship, and origin, he continues to shape the wines of Stark-Condé today – always with a fine sense for balance, structure, and character.

Tucked away in the elevated and unspoiled Jonkershoek Valley near Stellenbosch, the family-owned winery Stark-Condé stands for artisanal precision, sustainable cultivation, and uncompromising quality. In a UNESCO-adjacent environment, the vines grow on granite-rich soils at elevations of up to 600 metres – ideal conditions for elegant wines with character and depth.
What began as a small project by José Conde has grown into an internationally acclaimed boutique winery. Visitors appreciate not only the wines but also the estate’s unique atmosphere – shaped by its tranquil lake, surrounding nature and the stylish tasting room.
Stark-Condé Wines – Precise, Sustainable, and Full of Character
Stark-Condé wines are made from carefully selected grapes grown organically and vinified with minimal intervention. The focus lies on classic Bordeaux varieties such as Cabernet Sauvignon, Merlot and Syrah, which thrive particularly well in this region.
Thanks to natural yeasts, open-top fermentation, and ageing in French oak, the result is powerful, structured red wines with excellent ageing potential. The limited white wine production also impresses with freshness, clarity, and minerality.
With a small annual production of around 10,000 cases, Stark-Condé is a hidden gem for lovers of authentic South African wines.
