Yeast

Yeast is a microorganism (fungus) that has the ability to ferment grape juice and convert sugar into alcohol. Yeasts rest in the vineyard soil and are transferred to the grapes by wind, rain or insects. In addition, there are also artificially produced pure-breeding yeasts, which winemakers use during fermentation to convert the must into wine. Pure culture yeasts have the advantage of being able to precisely control the fermentation process.
