Vinification
Vinification refers to the entire process of winemaking – from harvesting the grapes to bottling the finished wine. The term comes from Latin vinificare, meaning “to make into wine.” Vinification consists of two main phases: grape processing (including crushing, pressing, and fermentation) and wine maturation (e.g., in stainless steel tanks or wooden barrels). Depending on the wine style, grape variety, and winemaker’s philosophy, additional steps such as malolactic fermentation or bâtonnage may be included. In South Africa, both traditional and modern techniques are used, resulting in a remarkable diversity of wine styles.
