Tannins

Tannins are odorless polyphenols from the skin, stem or seeds of a grape. Depending on the ripeness, these grapes have a more bitter taste and leave a furry impression on the tongue, which is also called astringent substance. These tannins serve as protection for the grape from injury and contribute to the wine's shelf life. The better the tannin structure, the more mature the grape and the higher the quality of the wine. Especially red wine, the tannins give weight and structure, providing a full flavor.
