Polyphenols

Polyphenols, also called phenols, are chemical building blocks in wine and a collective name for a group of organic compounds. These substances are found in color pigments, tannins and flavors. The most valuable ones are found in the skins of grapes. Polyphenols directly influence the color of wine and, due to their astringent-bittering effect, also the smell and taste. In addition, they also have a beneficial effect on the shelf life. Polyphenols have a positive influence on the human body, similar to vitamins.
