Production of Ice Wine
The production of ice wine requires precise conditions and careful handling of the grapes. Winemakers must wait for temperatures to drop below freezing, typically between -8°C and -14°C. Once the grapes are frozen, they are harvested in a state of cold and immediately pressed, extracting the concentrated juice. Due to the high sugar content in the grapes, a sweet and aromatic must is fermented into ice wine.
