Maturation

All the processes that occur after alcoholic fermentation up to bottling are called maturation. This process is intended to take care of the wine and improve its quality, the winemaker can influence it by cellar measures or let nature take its course. The maturing can take place in stainless steel tanks (mostly for white wines) or in wooden barrels, more common for red wines. During this time, the flavors and aromas continue to expand. In the case of high quality wines from South Africa, this process can take several years, but the expectation of many consumers is for immediate enjoyment, a circumstance that wineries address with their "Every-Day-Drinking" wines. Even after delivery, the wine continues to evolve in the bottle, but here it is usually no longer referred to as typical maturing, as the storage situations are too different.
