Cap Classique

Cap Classique is the sonorous name for South African sparkling wines produced according to the classic method. This means that the sparkling wines undergo the second fermentation in the bottle, which must last at least twelve months. The grape varieties most commonly used are Chardonnay and Pinot Noir. The first Cap Classique from the Cape was the Simonsig Kaapse Vonkel Brut.
