On the nose, the Bergpad reveals refined aromas of preserved quince, violets, lavender and pear. These notes carry through to the palate, where a creamy mid-palate softness flows into an extended, delicate finish.
Fermentation took place in 400-litre ceramic clay vessels using mostly natural yeast, with a small addition of commercial yeast. The wine then matured for 11 months in clay before bottling. Only 1,087 bottles were produced. Food pairings include braai snoek with apricot jam, pan-seared springbok fillet with quince preserve, Parma ham and pear salad, or lemon meringue.
