SMOKED SALMON ON HERB QUICHE

INDGREDIENTS
FOR 6 PERSONS- 30 g butter
- 200 g leek
- 8 large eggs
- small bunch of baby spinach leaves
- small bunch of parsley
- small bunch of dill
- 250 g sour cream
- 1 ripe avocado
- 100 g smoked salmon
- salt and pepper
- fresh lemon wedges
PREPARATION
Preheat the oven to 220°C. Heat half the butter in a pan and fry the sliced leek until soft. Mix the vegetables with the eggs, spinach, parsley and dill to form a thick batter. Season with a generous pinch of salt and pepper.
Heat the remaining butter in a frying pan and add the batter. Stir with a spatula for about two minutes so that the mixture is lumpy but still liquid. Bake the batter in the oven for 8 to 10 minutes until it has set, then leave to cool at room temperature.
Spread the sour cream over the quiche, slice the avocado and arrange on top with the salmon. Season, garnish with fresh lemon wedges and serve.

A summery quiche naturally needs a summery wine. As the wild herb quiche also involves smoked salmon, a fruity and fresh rosé is the perfect accompaniment.
