Astringency

Wine connoisseurs speak of astringency when a wine feels rough, bitter and scratchy. It occurs when the mouth wants to contract, so to speak, but this is not due to tartaric acid. Responsible for this astringent mouthfeel are tannins, which are mainly found in red wine. Astringency depends less on the wine country than on the grape variety used and the subsequent aging process in the winery. South African wines are generally fruit-driven, but some winemakers create so-called "chimney wines" with a high tannin content.
