Spring Harvest

During the spring harvest, ripe grapes from early ripening grape varieties are removed or harvested earlier for weather-related reasons. However, this is not an indication of a lower quality wine. On the contrary, sugar and acidity, for example, can balance each other out harmoniously. Weather-related early harvesting is about protecting the grapes from frost, hail, extremely high temperatures or heavy rainfall. This counteracts any undesirable rotting or loss of sugar and acidity. Particularly high quality sparkling wines are processed through the spring harvest.
