Keltern

Keltern or „winepress“ means squeezing the juice out of the berries during winemaking. The term is derived from the Latin word "calcare", which means "to stomp". In the past, the juice was squeezed out by pounding with the feet, but now modern and gentler equipment performs this task. The wine press, a mechanical lifting press, simplifies the pressing of the berries. The term pressing is usually already taken for general winemaking (the wine was pressed), although this is not 100% correct.
