For this wine, Springfield relies on a particularly gentle whole-berry approach. The grapes are not crushed, but handled with minimal intervention and fermented with natural yeasts to preserve fruit, juiciness and the classic character of the variety.
On the palate, this Cabernet Sauvignon is juicy, velvety and well balanced, with soft tannins, fine structure and an approachable, fruit-driven style.
The maturation in new and second-fill French oak adds depth and elegance to the wine. As it is bottled unfined and unfiltered, natural sediment may occur – decanting is therefore recommended.
