On the palate, this traditionally crafted Cap Classique offers lively bubbles, crisp acidity and beautiful red fruit flavours. Biscuit and delicate yeast notes — developed during the second fermentation in the bottle — give the blend of Pinot Noir (60%) and Chardonnay (40%) a creamy and rich texture.
After fermentation, the wine matured for two to four years in the bottle, adding depth and refinement. It pairs wonderfully with desserts, soft cheese, as well as seafood and white fish.
