BEST WINES WITH ASPARAGUS
It's finally starting – this year's asparagus season. Whether green or white asparagus: the popular stalked vegetable delights the palates of many gourmets. Incidentally, asparagus bears the name "royal vegetable" because it used to be served only in royal houses. Of course, a good glass of wine is a must. We'll tell you which wine harmonises with the royal vegetable so that nothing stands in the way of your culinary pleasure.
WHITE WINES FOR ASPARAGUS
With white asparagus, the wine should not be too acidic and delicately aromatic so that it does not mask the flavour of the asparagus. As green asparagus has a stronger flavour of its own, the accompanying wine can be a little more full-bodied, as can the rich Hollandaise sauce. Grape varieties such as Weißburgunder, Sauvignon Blanc or Riesling are best suited.

LIGHT SPAGHETTI WITH GREEN ASPARAGUS AND CITRUS DRESSING
Fresh, light and full of flavour: the combination of crunchy green asparagus, fresh citrus notes and al dente spaghetti makes this recipe a real highlight for the asparagus season. And this is how it works:

Savoury Asparagus Spaghetti
Ingredients
(for 2 people)- 500 g green asparagus
- 250 g spaghetti
- 2 cloves of garlic
- 1 organic lemon
- 1 tbsp olive oil
- 100 ml vegetable stock
- 50-75 g grated Parmesan cheese
- Salt and pepper
- Black olives (optional)
Preparation
Firstly, cook the spaghetti in salted water until al dente. In the meantime, wash the green asparagus, peel the lower third, remove any woody ends and cut into two to four centimetre pieces. Peel and finely dice the garlic and sauté with the asparagus in olive oil for 2-3 minutes. Then pour in the vegetable stock and simmer for 5 minutes.
Wash the organic lemon in hot water, grate the zest and squeeze out the juice. Drain the spaghetti and add to the asparagus. Mix in the lemon juice and zest and add black olives if you like. Season to taste with salt and pepper, sprinkle over the Parmesan and serve.
Our Wine Recommendation
An acidic Sauvignon Blanc with grassy notes goes particularly well with green asparagus - such as the Delaire Graff Coastal Cuvée Sauvignon Blanc, as it scores with a fresh, crisp acidity as well as flavours of gooseberry and nettle. The Steenberg The Black Swan Sauvignon Blanc is also an excellent choice, as the bouquet is mainly characterised by green notes and the full-bodied white wine impresses with its beautiful acidity.

Ingredients
(for 4 persons)For the pastry:
- 140 g Flour
- 100 g cold butter
- 125 g grated cheddar cheese
- ½ Tsp Salt
For the filling:

- 4 large eggs
- 250 ml sour cream
- 1 Tsp Dijon mustard
- 100 g goat's cheese
- 1 handful of fresh herbs (e.g. dill, tarragon, chives)
- 150 g green asparagus
- Salt and Pepper to taste
Preperation
Place the ingredients for the pastry in a mixing bowl and mix for about a minute. Then press the pastry evenly into a quiche tin (alternatively, you can also use a springform tin), cut off the edges if necessary and set aside. Now preheat the oven to 180°C and prepare the filling.
Crumble the goat's cheese and chop the herbs. Place both in a bowl with the eggs, sour cream and mustard, season lightly with salt and pepper and stir until smooth. Pour the mixture over the pastry and place the asparagus on top. Place the quiche tin in the oven and bake the asparagus quiche for around 40-45 minutes until cooked and golden brown.

The Spier 21 Gables Sauvignon Blanc 2023 is the perfect accompaniment to this delicious and sophisticated quiche, as its freshness and mineral finish balance out the rich flavours of the quiche wonderfully. The fruity notes of gooseberries, kiwi and above all the light herbal flavours harmonise beautifully with the dish.
Red's for Asparagus
With red wines, it depends on how you prepare the asparagus. Red wines with a high tannin content do not harmonise so well with dishes with asparagus, as they are often too dominant. Lighter red wines, on the other hand, can also be a good accompaniment to full-flavoured dishes with meat and green asparagus.
