On the palate, it unfolds a complex flavor profile with concentrated notes of green fig, lime, passion fruit, and stone fruit. A crisp acidity lends the wine a beautiful length.
For this reason, the Warwick Professor Black Sauvignon Blanc is already a delight on its own. However, it also pairs perfectly with grilled salmon and a spicy pasta salad. With the Warwick Professor Black Sauvignon Blanc, the winery pays tribute to the scientist Professor Black, who once experimented with planting a peach variety at Warwick. Later, vines were planted in the same spot - and the first Sauvignon Blanc produced from these grapes was said to have had distinct peach aromas.
