In the glass, the wine displays a pale straw colour with brilliant green edges. The nose opens with lime blossom and passion fruit, followed by a layered mix of lemongrass, blackcurrant leaf, and sweet greengage.
The palate is bright, fresh and focused, showing purity and complexity, while nine months on the lees contribute texture and depth. This Sauvignon Blanc has the elegance and structure for ageing.
Serve well-chilled – perfect as an aperitif or with oysters, grilled yellowtail or salmon roses with caviar.
