Smoked Salmon on Herb Quiche
Preparation:
Preheat the oven to 220°C (430°F). Heat half of the butter in a pan and sauté the sliced leek until soft. Combine the cooked leek with the eggs, spinach, parsley, and dill to form a thick batter. Season generously with salt and pepper. Heat the remaining butter in the pan until very hot, then add the batter. Stir with a spatula for about two minutes until the mixture becomes lumpy but still runny. Bake the mixture in the oven for 8 to 10 minutes until set, then allow it to cool to room temperature. Spread the sour cream over the quiche, slice the avocado and arrange it on top along with the smoked salmon. Season to taste, garnish with fresh lemon wedges, and serve.Ingredients (serves 6):
