Greek-Style Chicken Salad
Preparation:
Preheat the oven to 200 degrees Celsius. Wash the vegetables, halve the tomatoes, dice the bell peppers and zucchini. Peel the onions and cut them into wedges. Line a large baking tray with parchment paper, place the chicken breasts skin side up on it, and arrange the tomatoes, bell peppers, and onions alongside. Drizzle everything with olive oil and season with salt and pepper. Roast in the oven for about 20 minutes, until the chicken is cooked through and the vegetables are slightly roasted. Meanwhile, wash the lettuce leaves, pat them dry, and arrange them on a large platter. Slice the chicken breast and place it on top. Crumble the feta and sprinkle it on top along with the roasted vegetables and olives. Sprinkle everything with oregano, drizzle with some olive oil and red wine vinegar, and serve with crusty bread.Ingredients (serves 4):
