Ingredients: 1 bunch watercress, ½ cucumber, 1 fennel bulb, 200 g smoked salmon, 100 g ricotta, 1 handful capers, 1 lemon, extra virgin olive oil, salt and ground black pepper
Wash the watercress first, shake it dry and pluck off the leaves. Peel the cucumber into fine strips, then wash the fennel and cut it into small pieces. Chop the ricotta and mix it with the vegetables and the smoked salmon. Depending on your taste, you can add a handful of capers or replace the salmon with smoked trout. Now it´s time to prepare the dressing. Squeeze the lemon and mix the juice with the olive oil. Season it with salt and pepper and pour the dressing over the salad - the summer delicacy is ready!
