With raclette there are no limits to your imagination - so why not try something new for a change? How about gratinated nachos, a miniature pizza, a small tarte flambée or an omelette? Most of the ingredients for these are already on the table anyway, or can be easily added, and the dough can also be prepared in no time at all before the guests arrive. So nothing stands in the way of small culinary delights.
Nacho pans à la Mexico
Most people like to eat nachos at the cinema, but they taste just as good when baked with cheese from the raclette pan. If you like, you can refine the tortilla chips with corn, kidney beans or jalapeños, depending on your taste.
Mama Mia: Mini pizza from the pan
Ingredients for the pizza dough: 250 g flour, ½ packet of dry yeast, 1 pinch of salt, 2 tablespoons of olive oil, 125 ml lukewarm water
Ingredients for the topping: tomato sauce, cheese and, if desired, vegetables and meat
Preparation: Mix the flour and dry yeast together, then add the remaining ingredients, work everything into a smooth dough and leave to rise for an hour. Then form dough balls about the size of plums. These are later pressed into a pan for the raclette and pre-baked just below the table grill. Then the mini pizza can be topped to your heart's content with a tablespoon of tomato sauce and your favourite ingredients. Simply sprinkle a little more cheese on top and bake in the raclette oven for a few minutes.
Crispy, crunchy, tarte flambée
Ingredients for the Flammkuchen dough: 200 g flour, 2 tablespoons olive oil, 125 ml water, 1 pinch of salt
Ingredients for the topping: herb cream fraiche, onions, diced bacon
Preparation: First sift the flour into a bowl, then mix with the other ingredients to form a smooth dough. Cover and leave to rest for a few minutes at room temperature, then form into balls of dough about the size of a plum. Place them in a raclette pan, spread with crème fraîche and sprinkle with the remaining ingredients. Bake for about ten minutes under the table grill.
A fine egg: small pan omelette
Ingredients: 3 eggs, 100 ml cream or milk, salt and pepper
Preparation: Whip the eggs, whisk them and mix with cream or alternatively milk. Season to taste with salt and pepper. Simply add the raclette ingredients to the pan, pour a small ladle of the egg mixture over it, sprinkle with cheese and bake under the hot raclette grill.
Our wine recommendation
A glass of wine is a must during a cosy raclette evening. While the raclette oven is warming up, you can toast to a wonderful evening with a fine sparkling wine. Those who like to fill their pans with vegetables, fish or poultry will enjoy a complex white wine. If the ingredients are a little hotter and spicier, a powerful red wine is the best choice. If you like to add a little fruit with chocolate sauce to your dessert, a delicious dessert wine is the best choice.
