Puff pastry: 340 g flour, 180 g butter, 1 tsp salt, 2 eggs, 120 g grated parmesan, 180ml water
Filling: 250 ml milk, 250 ml cream, 1 tsp salt, 4 eggs
Onion mix: 2 kg chopped onions, olive oil, 3 bay leaves, salt and pepper
Optional: 200 g Emmental cheese, 150 g bacon, dill
Chive dressing: ½ cup chopped chives, 1 grated chives, 1 clove grated garlic, 100 ml white wine vinegar, 200 ml olive oil, 1 tsp Dijon mustard, salt
Method: To prepare the puff pastry, mix the flour and butter together and add the salt. Then put the eggs and the water into the mixture. Knead the dough and leave it to rest in the fridge for an hour. Line a tart tin or similar with the dough and chill it again in the fridge. Then prepare the onion mixture by frying the onions together with the bay leaves until they turn a golden yellow colour. Add seasoning to taste, pour off the remaining oil and leave to cool slightly.
Now place the onion mixture in the prepared tart dish and then pour the egg mixture over it. Optionally, you can also fry bacon until crisp and sprinkle with grated Emmental cheese, place in the tart dish, season with dill and pour the egg mixture over the top. Place the version of your choice in the oven at 190°C for 45 minutes.
In the meantime, mix all the ingredients for the chive dressing and leave to stand for an hour before serving. Serve the finished onion tart, drizzle the dressing over it and enjoy!
