Cheese cake with berry compote

For 10 portions

Ingredients for the cheese cake:

For the base: 400 g shortbread biscuit, 100 g ground hazelnuts, 15 ml castor sugar, 100 g butter, 1 teaspoon of cinnamon

For the filling: 850 g cream cheese, 4 eggs, 1 vanilla pod, 10 ml corn flour, Juice from one lemon, 20 g honey, 200 g sugar, 400 g caramel treat

Ingredients for the berry compote: 1 kg mixed berries, 100 g brown sugar, 15 ml fresh lemon juice, 30 ml fresh orange juice, 15 ml Nederburg The Winemasters Noble Late Harvest, some butter


Use two shallow baking trays and grease with butter. For the dough crush the biscuits and melt the butter. Now add sugar and ground hazelnuts and put the dough on one of the two baking trays.

Now the filling. Scrape out the vanilla pod and combine it with the cream cheese, eggs, honey and lemon juice. Pour half the mixture on top of biscuit base and the other half into the second tray that is empty.

Now put the trays in the oven at 165°C for 25-35minutes until baked and set. Remove both trays from the oven and let it cool down. Once cooled down, put both trays in the fridge. After an hour take both tins out of the fridge and carefully empty them. Place the filling with the biscuit base on a plate and whip the caramel treat spread on the cheese cake with biscuit base. Put the second cheese cake without the crumbed base on top of the caramel to create a “cheese cake sandwich”.

Now prepare the berry compote. Melt butter in a hot pan and add sugar until it is dissolved. Add the berries and fruit juices and simmer for about 10-15 minutes. After that take the pan away from the heat, add the Nederburg The Winemasters Noble Late Harvest and then let cool off. In the meantime, cut the cheesecake into small serving portions and arrange with the berry compote.

By the way: The berry compote also tastes heavenly with desserts. If you have any leftover you can freeze the compote and later serve it to a delicious dessert.
