Ingredients for Mango Cranberry Chutney: 1 onion, 1 mango, 1 handful of dried cranberries, 1 tsp salt, ½ tsp pepper, 1 tsp coriander seeds, 1 tsp chopped hazelnuts, wine vinegar, pomegranate syrup
Ingredients Barbecue Marinade: 5 garlic cloves, 75 ml oil, 1 piece of fresh ginger (approx. 5 cm), 2 tsp ground coriander, 3 tbsp mango cranberry chutney, 2 finely chopped chillies, salt, juice of 1 lemon
Preparation: First prepare the chutney and cut onions, mango and cranberries into small pieces. Bring the onions to a boil in a little bit of hot water and let simmer for about 5 minutes. Afterwards, add the mango and cranberries. Season the mixture with salt, pepper, ground coriander seeds and chopped hazelnuts as well as with the wine vinegar and pomegranate syrup. The chutney can boil for another 10 minutes until it becomes thicker. Pour in a jar afterwards; it will keep up for to 4 weeks.
Tip: This chutney is not only wonderful as a poignant sauce for your grillables – with a few tablespoons, you can also refine the marinade for your meat! For example the Cape Malayan Barbecue Marinade. For this, very finely chop garlic, ginger and chili and mix with the coriander, oil, lemon juice and chutney. Marinate the meat and let sit for at least 2 hours before barbecuing.
