Cape Chicken Pie

For 8 persons

Ingredients for chicken: 1 whole chicken, 5 whole cloves 1 Tbsp coriander seeds, 2 bay leaves, 5 sprigs fresh thyme, 3 litres water, 1 onion, 1 carrot, 4 gloves of garlic

Ingredients for Pie: 60 g butter, 1 onion (chopped), 300 g salted ham, 2 cloves garlic, ¼ tsp ground cloves, ¼ tsp ground coriander, salt and freshly ground black pepper, 125 g cake flour, 125 lemon rind (chopped), 3 Tbsp chopped fresh parsley, 5 hard-boiled eggs (sliced), 400 g ready-made flaky pastry, 1 egg (lightly beaten)

Place the chicken and all the spices with water in a large saucepan. Bring to the boil, reduce the heat and simmer for 5 minutes; while skimming the fat off the surface. After that, add the rest of the ingredients and simmer for 1 hour until the chicken is tender.

Remove the chicken from the broth and leave to cool. Pick the chicken off the bones and cut into small pieces. Strain the broth through a sieve and reserve it.
Preheat the oven to 200 °C and heat a saucepan with 2 Tbsp butter. Add the onion and cubed ham with the spices and sauté it all together for 5 minutes. Add the remaining butter and the flour and cook on low heat for 5 minutes. Mix 1litre reserved chicken stock with lemon peel, parsley and chicken pieces. Add the more stock if the sauce is too thick. Seasoning to taste the mixture and pour it into an ovenproof dish (20 x 20 cm, x 10 cm deep) and layer the egg slices on top. When the chicken has cooled completely, you can cool it down.

Roll out the pastry on a lightly floured surface and place it over the mass. Be sure that the pastry covers the top of the pie and touches the sides of the dish. Brush the pastry with beaten egg and make a small incision in the centre of the pastry to allow steam to escape. Bake the pastry for 20-30 minutes, until it is golden brown.

Our Wine recommendation

The Cape Chicken Pie tastes best with the fruity La Motte Franschhoek Chardonnay 2020, whose citrus notes harmonise wonderfully with the pie. The white wine matured for twelve months in French oak and is an excellent food companion. If you prefer red wine, the La Motte Cellarmaster Vintage Selection Shiraz Grenache 2018 is the ideal accompaniment, as it is nicely spicy and well-structured.
