Serves for 4
Ingredients: 8 thick slices of sourdough bread, 320 g grated mozzarella, 20 g fresh basil, 200 g cherry tomatoes, 1 red onion, 100 g butter (room temperature), sea salt, freshly ground black pepper
For the dried tomato tapenade: 200 g dried tomatoes preserved in oil, 50 g Kalamata olives, 50 g capers, 2 cloves of garlic, 1 tablespoon olive oil, 1 red chili pepper
Preparation:
First prepare the tomato tapenade. For this, drain the dried tomatoes and capers and chop them finely. Pit the olives, crush the garlic cloves and deseed the chili pepper and chop finely as well. Mix the ingredients until you have a smooth mixture.
Wash and quarter the cherry tomatoes, peel and thinly slice the onion. Wash the basil and pluck the leaves.
Now butter the bread slices on both sides and spread half of the bread slices additionally from one side with the tomato tapenade. Top these with the onions, basil and cherry tomatoes. Season with sea salt and freshly ground black pepper. Then sprinkle the grated mozzarella on top and cover the sandwiches with the remaining slices of bread.
Grill the sandwiches in a folding grill over medium heat until golden brown on both sides and the mozzarella has melted.
