Boar with Prunes and Raisins

Ingredients for 6 People: 1 kg wild boar (joint), 500ml red wine, 125 ml freshly pressed orange juice, grated peel of an untreated orange, 125ml red wine vinegar, 2 tbsp balsamic vinegar, 2 onions, 1 carrot, 2 stalks of celery, 2 bay leaves, 1 twig of rosemary, 2 cloves, ½ bunch of thyme, 1 tsp crushed black pepper, 5 tbsp olive oil, 150g prunes, 20g raisins, 30g butter, 4 fresh plums, 30g pine nuts, Salt and pepper, 1 piece of fine cloth or a spice bag


Preparations: Start one evening ahead with the preparations. Cut the meat into large cubes. Mix the red wine, orange juice and half of the grated orange peel with the red wine vinegar and balsamic vinegar. Clean the onions, carrots and celery and roughly chop. Lay the bay leaves and the crushed pepper with rosemary, cloves and thyme onto a piece of fine cloth and tie together to receive a small sachet or fill the spices into a spice bag and add to the red wine vinegar mix, together with a hint of salt and the vegetables. Boil once and let cool. Pour the stock over the meat and let sit overnight.
The next day, drain the meat in a sieve, keep the marinade and remove the vegetables. Season the meat with salt and pepper and fry it in very hot oil in a casserole, portion by portion. Add half of the marinade and let stew for 30 minutes with the lid on.
In the meantime, quarter the prunes and fry with the raisins in butter. Deglaze with the rest of the marinade. Quarter the fresh plums as well and remove the stones. Roast the pine nuts in a pan without fat and add to the meat, together with the raisin prune mix, plums and the rest of the grated orange peel. Bring to a boil once more. Serve with potatoes or dumpling and red cabbage.
