Ingredients: 750 g white asparagus, 250 g strawberries, 100 g sugar, 100 ml white balsamic vinegar, 2 tbsp oil, 150 g rocket, 2 tbsp pine nuts, 1 tsp basil
At the first step, peel the white asparagus and then remove the ends of both asparagus varieties. Let the white asparagus cook in salted water for 15 minutes and add the green asparagus after 5 minutes.
Meanwhile, you can prepare the dressing. Caramelise the sugar and deglaze with 100 ml of hot water and vinegar. Cook for 5-7 minutes. Finally, mix the asparagus with the remaining ingredients.
